WeekEnd Food Ideas!

No I never really post on the weekends but I was wanting to share some cool easy "Weekend Food Recipes". I thought that would be pretty cool, because a lot of us eat out on the weekends and then come Monday you feel like you wrecked your for those that are trying to eat home more on the weekends, I pulled ya some recipes....

Saturday Night you could always make....

Gourmet Whole Grain Pizza
Makes 2 pizzas
1 1/4 cup warm water
2 Tablespoons dry yeast
1 1/2 Tablespoon raw sugar
1 teaspoon salt
4 cups whole wheat flour
1 cup ground oats 
2 Tablespoons olive oil

Mix the ingredients above in a bread maker (on a "dough" setting), in a kitchen mixer, or by hand, if you want a really good upper-body workout. :) Add more or less water if needed to get the consistency can always "dry it up" a bit with some extra flour.

Flour a cutting board by dusting some whole-wheat flour on top. Knead the dough until it is even in texture and consistency, then cut the dough in half. Roll out one half into a circle to fit your greased pizza pan (or cookie sheet). Do the same with the other half of the dough. 

Let the two pans of pizza crust rise in your preheated oven for about 20 minutes.

After the dough has risen, top each pizza with the following:
Tomato sauce (about 3/4 cup)
Sprinkling of mozzarella cheese
Cut up vegetables of your choice (tomatoes, onions, peppers, etc)
Fresh herb leaves (basil, oregano, rosemary, etc)

Let the pizzas bake at 350F for 16 - 20 minutes (switching pizzas from top/bottom and vice versa, halfway through the baking), or until the bottom of the crust is crispy. You can check this by lifting up the side of the pizza with a spatula. 

A serving size of 2 slices, with a side of greek salad & spinach greens, makes a delicious Nutritarian dinner treat! Enjoy! 

On Sunday you could make! Turkey/Lean Ground meat/Sweet italian sausage Meatballs! The original recipe was an idea from Rachael Ray, but over time I've made it my own and it's a winner to my family! * I make enough so we can freeze them *But here is the Rachael Ray Recipe


  • 1 cup torn pieces of stale, good-quality white bread, packed
  • Milk
  • 1 pound ground beef, or Lean (extra) ground beef
  • 2/3 pound ground pork, I use Turkey, and Sweet Italian sausage instead of pork
  • Salt and pepper
  • 2 cloves garlic, grated or minced
  • 1/2 cup grated Pecorino Romano cheese (a couple of handfuls) I use Parmesan Cheese or Bleu Cheese, or you can do Feta or Goat cheese
  • A pinch of freshly grated nutmeg (about 1/8 teaspoon)
  • 1 egg
  • A generous handful flat leaf parsley, finely chopped
  • A generous drizzle of extra virgin olive oil (EVOO)
* To make all my meatballs the same size, which is about an inch or so around, I use an ice cream scooper, you can find at Walmart*


In a small bowl, soak the bread pieces in milk to soften.
Place the meats in a mixing bowl and season with salt and pepper. Add the garlic and cheese. Squeeze the excess liquid from the bread pieces and crumble them into the bowl. Add the nutmeg, egg, parsley and olive oil and mix well to combine.

Staying Motivated...Hard to do at times!

Today I was going to talk about staying motivated and how it's easy to lose motivation...Hey I've gone thru it myself a lot, like when I did this weight loss before in 2009 I was 226lbs then dropped to 186lbs, then the next thing I knew I didn't care about working out anymore because I felt I needed a break, and I reached my goal, and so the scale didn't care either, every time I got on it, it just kept going right back up! So I would always accuse it of being broke...DENIAL!

~Motivation 101~ Keep in mind this is just my thoughts, so feel free to share yours. I might can steal use them!(;

I've found the best way to deal with motivation is to find fun ways to change your workout and try new things, doing the same routine daily becomes so boring and that makes it super easy to grow tired of what you do. Change your workouts, also a great way to break plateaus!

At times people lose motivation after they've lost a good amount of weight or reached their weight loss goal...I can see how that happens, I mean hey you worked hard to get to this point, you sacrificed your foods, time, and in some cases money to get to where you are. I'm here to tell ya...the work is never over, but you can enjoy the newer you, since you worked hard! Being healthy doesn't ever take a break, so keep going. "It's a life style change"

Try and find a friend that can workout with you or maybe that person has something that they are doing far as a workout, that you haven't tried, and there you go something different to do. Working out with a friend(s) is always so much fun...y'all know I love my girls!! My team of Motivation and Inspiration!

If you workout a lot at me....sometimes it can grow old, so go outside for a run with the kiddos in the yard, instead of popping in a DVD, roll on the floor with your kids, or just go visit a friend or family member...just to change the scenario. Get out the house for god sakes!!

Food food food...Oh how we love you...but making the right choices with you is hard!! Then the sky opened and dropped Pinterest on my plate. I must say this is my favorite place to get recipes. If you haven't used are soooo out of sink with the world lol. It's so easy, all you do is type in what you want for dinner for instance...I.E. Chicken.....Boo-Yah...bunch of recipes pop can have chicken for 365 days and it'll be different every night!! Go to websites and find different ways to make your fav things, but in a healthier way! Trust me it's all there!

Facebook...oddly enough it can be used for other know??, other then drama...FB is a perfect place to interact with others and sometimes you can find camps or groups of people that may have a workout or a fit challenge in your community and you didn't even know it!!! Just search and find and ask around and you'll be surprised what you'll discover.

If you are a runner...try and keep your music playlist fresh, if you have fresh music you can run all day! Keep it fresh and funky! ( posted this pic yesterday..but here is what I use in case ya missed it) Fit radio and AOL radio

Then lastly, just enjoy yourself and know that no one is perfect and there are days that everyone struggles, you just have to find whatever it is in you that you can use to keep yourself going...Like for me I work out because I want to be healthy but most importantly I have a handsome baby boy that I want to live for and teach him the same good find your inter-motivation, whether it's posting 5000 selfies a day for people to say you look hot (NO one in particular lol), then I say do it, if that's what keeps you going, I'm not judgemental... so whatever floats your boat, some people need that type of motivation...Hey, whatever it is that works for your individual self use that when you don't feel like working out anymore or you just can't keep going! I promise it works!

You Can Stay Looking HOT while on VACA!!

Today I was thinking...This time of year everyone is going on vaca somewhere...because, DUH it's the summer and the kiddos are out of school, so it's much needed family time for people!

I wanted to share a cool "Vacation Workout" that you can take anywhere and do just about anywhere. Hey, just because you are on vacation, doesn't mean that you can't tackle yourself a nice workout! And still stay fit, so when you come back home, you'll still be able to stay in your routine of things. As we all know sometimes going away from your normal life can throw you off a bit, especially when you're on vacation, because you want to do things that you don't do at home. We eat a lot, drink a lot and go go go, but before you do all that let's hit the beach, or hotel room, or find you some space and about 30 mins for yourself.... and let's go!! ( Also, Pilates Bands are great and easy to take anywhere too, you can find some AWESOME workouts on Pinterest so you can use them)! (;

Start off by getting in a nice 10 minutes of cardio(: Run, jog, whatever works for you! Then let's do the following: If you don't know some of the moves, feel free to YouTube them ( you'll find hundreds of people showing you the moves!) If you are an IPHONE user I have 2 pretty cool music apps that can help you get ya jam on while doing this too!!! (FitRadio and AOL Radio) fun APPS!

It was an amazing SURPRISE weekend!! I can FINALLY shout about it!!! It's been so hard not writing about this!!

Today's blog is about LeAnn and her Bday weekend!!

OMG can you believe we finally pulled off the SURPRISE party? Lord, that was so hard keeping a secret like that from her! lol Can't count how many times she's walked up on us talking about it, and we had to pretend we were talking about whatever lie we made up!! lol

Oh LeAnn, seeing your face when you walked in was SO worth all of it!!! Main Event was so much fun!! We did everything, from laser tag(and we got spanked)LOL to bowling!!! Enough's a Saturday Re-Cap for ya!!

Wonderful Beignet Recipe for ya!!!

Yes, I'm still talking about Louisiana, but I had got a lot of comments after I posted the Cafe Du Monde Pic the other day, so I thought it would be cool to share with you guys a little more of my roots!!! One thing I love about Beignets is I will always remember that when my mom would cook them when we were kids, she would always let us help...and my favorite part was putting on the powdered sugar!!! So, it's a fun job for the WHOLE family!!!!! (:

    • 1 (1/4-oz.) envelope active dry yeast
    • 1 1/2 cups warm water (105° to 115°), divided
    • 1/2 cup granulated sugar
    • 1 cup evaporated milk
    • 2 large eggs, lightly beaten $
    • 1 teaspoon salt
    • 1/4 cup shortening
    • 6 1/2 to 7 cups bread flour
    • Vegetable oil
    • Sifted powdered sugar


    1. 1. Make the yeast mixture: Combine yeast, 1/2 cup warm water, and 1 tsp. granulated sugar in bowl of a heavy-duty stand mixer; let stand 5 minutes. Add milk, eggs, salt, and remaining granulated sugar.
    2. 2. Form a dough: Microwave remaining 1 cup water until hot (about 115°); stir in shortening until melted. Add to yeast mixture. Beat at low speed, gradually adding 4 cups flour, until smooth. Gradually add remaining 2 1/2 to 3 cups flour, beating until a sticky dough forms. Transfer to a lightly greased bowl; turn to grease top. Cover and chill 4 to 24 hours.
    3. 3. Roll and cut: Turn dough out onto a floured surface; roll to 1/4-inch thickness. Cut into 2 1/2-inch squares.
    4. 4. Fry until golden: Pour oil to depth of 2 to 3 inches into a Dutch oven; heat to 360°. Fry dough, in batches, 2 to 3 minutes on each side or until golden brown. Drain on a wire rack. Dust immediately with powdered sugar

        My Trip!!! Sad it's over sooo fast

        We had a GREAT trip...even tho we lost my granddad, we still made the best out of it! It was nice to see my parents and siblings after that loooong ass year! It was worth it seeing their face after my weight loss!! They were very happy for me!!!

        We arrived Friday night after a long drive!!! It was worth seeing that Louisiana sign!!!
                                                             We had some nice family time in the French Quarter!

        Made some AWESOME FOOD!!!! Jambalaya! and I did get to make the Alfredo that I posted last week!!! Friday's Blog!! It turned out great!!! As you can see, it wasn't much left!!!

         Then Bran wanted to go sit outside!! Love this pic of him!!!

        Then my GIRLS sent me a pic!! They knew I was missing them a lot!!!

        We had to hit up Cafe Du Monde with my mom and sis for my last night in the BOOT!!

        Saturday we buried my grandfather ): It was a beautiful homegoing service!!!

        We had an amazing time! Hope each dad, granddad, and even the single mama's had an amazing FATHER'S DAY!!!!! God Bless!!!
