Another Weekend-athon!!!

Hey it's Monday!!!

I had a great fun filled, yet busy weekend....

Friday morning I got it in with a little spin class with some of my fav peeps;;
and then me and LeAnn and Crystal went and to Country Burger and had a wonderful lunch!

Then I got home and did a little online old navy shopping! LOVE LOVE OLD NAVY!!

After a while my boys came home and "Mommy day" as I like to call it was over and it was fam time so we loaded up and headed to Best Buy for some Electric shopping! More like "Electric Looking" because we don't need to buy another thing right now. But try telling my husband that! 
Him and Bran found some headphones and that was a task trying to get them away from the music! And then Bran found some colors and paper and it was all over from there, we darn near had to drag him out the store, kicking and screaming! 
We worked up an appetite and headed home for some Pizza, I think I was more excited then them and I don't even care for Pizza. Is that not weird? I must have been hungry. So we had Pizza and Spencer kicked my ass in Words With Friends. That's ok I'm not a sore loser, I usually take a butt kicking. He's pretty good, and he's not the speller in the fam that's me. <at least it was> 
He's pretending to be so focused!! 

So Saturday as you already know I started it off at my fav place LOA!!!! With my Divas! 
Then headed home to do some much needed house work! Lord I'm embarrassed to say, but my house was soooooo dirty! And for some reason lately I hate cleaning!

Bran called himself helping but he decided to stop before he started! He said his knee and leg was hurting!!! lol
So he stopped and said if he eat he'll feel better!!!
And of course while I'm cleaning Brandon had to show me that he hurt himself from sitting !! LOL 
So Mama had to stop and nurse her baby's booboo!
So after all my cleaning we did a little Insanity and spent time as a fam!
So I need to tell you my dress story.......this is the most cra cra thing I got a new dress Saturday night and I went to iron it Sunday and it was RUINED with some type of oil on it!!!! I was soooooooooooooooo pissed I screamed. My husband was like OMG!! here let's go get a new one!!!! I quickly said "OK" OLD NAVY here I come!!! I found that pink one for $9.00 bucks, yea baby that's my kind of deal!! I made it to the Bridal shower for Shelly LATE of course but we had a lot of fun seeing all the ladies all dressed up! then after me and Jen went to Country Burger and ate! Yes I ate every drops of my fried pickles, THANK you very much!!!
Bran thought that was his dog!! lol My baby is a good lil Manikin, he was almost lost in this pic!! A Brandon Manikin in a story nearest you!!!! lmao

~Insanity vs. Other Workouts~

Good Morning all::::

I wanted to talk about The Insanity program today, because I have been asked a lot about it and why I've picked to do it sooooo much and for the length of time I've done it.

Yes, I found good results with other at "home" programs in the past. Like Taebo, I lost 45 lbs with it, accompanied with good eating.

PROs about TAEBO:

1. Great weight loss results -45lbs
2. Super fun and highly motivating, because Shelly and Billy Blanks are so much fun, and he loves to dance!!
3. Taught me how to over come my fear of pushing my body beyond what I thought I could do.
4. After doing it for a while it got EASY! Not as challenging.

CONs about TAEBO:

1. I didn't like how it got EASY. I love a challenge, because I would start to get bored with the program.
2. The Weight stopped, because I was so bored that I stopped trying.
3. Too long of a program.

But with all that being said....Taebo taught me that if I try I can acheive anything! For that I love to every now and again pop in one of the tapes and JAM out to him, because it was my original start and it's fun to remember how at first I could barely get through 10 mins without being tired as hell! LOL

In 2012 I discovered Shaun T I mean Insanity!! lol

And the only words I have to describe this program is.....IT WORKS, only if you stick to it!!!!! POINT BLANK!

I'm in love with Shaun T  Insanity for the simple fact that it kicks my BOOTY everytime I push play. Insanity does not allow you to hold back a dang thing, you have to use all every bit of yourself and more!! Just when you think it's over Shaun T pumps more!!!

Boy, doing it I never realized how damn short a 30 second rest was!!! but you look for that 30 seconds!

I've lost -30 or so pounds with Insanity after doing 3 rounds...yes 3!!! I said I love it!!! HAHA!

I knew I was a BIG MOMMA when I started Insanity but man!!! using only your own body really made me recognize!!!

I picked it because I read soooo many blogs and forums about it, and how hard it was and seeing how fine the person who made it was! DID I JUST PUT THAT!! JUST SAYIN!!

I liked how Shaun T said "If you want to change your body and mind" I challenge you with Insanity, that statement right there was enough for me!!! You challenge me Shaun T? Well, bring it baby!!

I love someone telling me I can't!! Those are the most ENCOURAGING words to me!!!!

If you have not tried Insanity and don't believe the infomericals that it works, let me be proof. It gave me my life back (I know that sounds so cliche but it's true) I discovered this whole new person, I'm more outgoing, I'm stronger physically and mentally.

I love waking up to this new me everyday!!!! I'm truly blessed to have found something that finally worked for me~~  So Thank you Shaun T!! and the Insanity Team and Beach body for putting out such an amazing, yet complicated program ever put on DVD!!!

You challenged me Shaun T, but I think I passed!!!

So, I dreaded to tell you all that after these last 3 weeks of Insanity and 3rd round I will be hanging up the gloves for a while and moving on to something new workout programs will go as follows and I hope some of you will follow along!!


1. Chalene Extreme for 90 days!! I hear its a wonderful program. If you get a chance look up the reviews, they are GREAT!!
2. ASYLUM VOL 1 and 2, 60 day program~~~ yaaay get to see Shaun T workout again!!
3. Hip Hop Abs~~ yet again...Shaun T! 30 day program

THEN....I'll see after all this what new things are out!!

I'm still waiting on the release of T25---ok ok I know you're sick of my Shaun T obsession, but I know this one will be good too!! I have to try it!!!

Island Pork Tenderloins!

Island Pork Tenderloin

I often find myself struggling to find new ways to prepare chicken and pork.  I get soooo bored with the usual options and so I will search and search to try and find something that sounds interesting.  Some are hits with my family, but I have to admit most are just OK, especially when it comes to chicken.  

One day I was going through a stack of recipes I'd pulled from various cooking magazines over the years and came across this one for Island Pork Tenderloin from Gourmet magazine.  The combination of ingredients sounded intriguing, and I knew I had a pork tenderloin in my freezer that needed to be used up, so I made up my mind to try it.  It seemed to me that Gourmet magazine is a pretty trustworthy source so I was excited to see if we would all like it.

Can I just tell you that I LOVE THIS DISH!  This pork blew my mind - it is so full of flavor.  I can't get over how the strange combination of ingredients come together to make the most delicious pork ever!  This is what you want to make when you have company (as long as your guests don't mind a things being a little spicy) - this pork will wow your guests!

Island Pork Tenderloin (adapted from Gourmet Cookbook)

For spice rub:
2 tsp salt
½ tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
2 pork tenderloins (2 ¼ - 2 ½ lbs total) trimmed
2 tbsp olive oil

For Glaze:
¾ cup packed dark brown sugar
2 tbsp finely chopped garlic
1 tbsp Tabasco

Stir the spice rub ingredients together in a small bowl and rub all over the pork.  Heat oil in ovenproof 12-inch heavy skillet over medium high heat.  Brown pork, turning occasionally, about 4-5 minutes total.  Remove from heat, but leave pork in skillet.

Stir together brown sugar, garlic and Tabasco in a small bowl.  Pat the mixture on top of the pork.  Place skillet in the oven at 350.  Roast until thermometer inserted diagonally into the center of each tenderloin registers 140 degrees, about 20 minutes.  Let pork stand in skillet, loosely covered with foil for 10 minutes.  

Balsamic Pot Roast!!

  Balsamic Pot Roast

3 lbs beef chuck roast, boneless 
Garlic salt & pepper seasoning
2 tbsp olive oil
1 onion, sliced
2 sprigs of fresh rosemary
2 bay leaves
2 fresh sage leaves (or a sprinkle of powdered sage)
2 cloves garlic, chopped
1 cup red wine
1/3 cup GOOD balsamic vinegar
1, 14.5oz can beef broth 
3 tbsp corn starch
Salt & Pepper
Baby carrots, about a bag
2 medium potatoes, cut into mouth sized pieces

While I prefer to cook my pot roast in a crock pot, I do think it's essential to sear the meat first.  I usually to do this part the night before.  Sprinkle garlic salt & pepper seasoning all over the meat.  Heat olive oil on medium-high in a large skillet.  When nice and hot, sear the roast on all sides - couple of minutes on each side.  Remove from pan and place in the bowl of your slow cooker.  Top with the sliced onion, chopped garlic and balsamic vinegar. I took a piece of cheesecloth and placed all the herbs in it, tied it up with kitchen string and placed it into the pot - this way you don't need to fish all the herbs out later.  Cover pot and put in fridge overnight.  

In the morning, add the red wine and beef broth.  Cover and turn slow cooker on low and cook for 6 hours.  Add the carrots & potatoes, turn the slow cooker up to high heat and cook for another 3-4 hours.  Once everything is done to your desired tenderness, pour the liquid into a large measuring cup.  Let it settle, then skim off the fat.  Add about half of it to a bowl and mix in the corn starch until it's nice and smooth.  Add the other half of the liquid to a medium saucepan and turn it on medium-high heat and bring to a slow boil.  Add the cornstarch liquid to the saucepan and stir to combine.  Heat until it gets hot and thickens up a bit.  Once you've got the thickness you prefer, turn off heat and pour the gravy/sauce back into the crock pot over the top of meat and veggies.  Serve hot.  

*If you want to shorten the cook time for this, cook it on high for 6-7 hours.  Steam the carrots under tender, and microwave your potatoes.  Cut the potatoes into bite sized pieces and add them and the carrots to the pot.  While the veggies are cooking you can work on the sauce.*

What's important {What's not}

Today I thought about life {my life}...there's so much going on in the world today and here in the last month that it made my think about life, and the important and non-important things.

The tragedy in Boston and West Texas made me think (The Important things to me are):

1. MY FAMILY:  After thinking about how people lost loves ones made me grateful and blessed to know that my family was safe and sound.
2. MY FRIENDS: How blessed each of them were ok, I even had a couple of them running in the Marathon that day but they are all good and home safe with their loved ones.
3. EVEN PEOPLE I DON'T KNOW: These people that were in these areas and are ok and still here today to talk to us about these horrible events.

The things that NEVER crossed my mind:

1.  I must be honest this BLOG never crossed my mind, because it's something that I can live without, I'm blessed to be able to log on and tell people about me or what's going on today...but honestly this is not as important as people out here suffering each and everyday. This all goes to show just how blessed we are and how we should never take anything for granted, NEVER take people for granted...they can be gone in a blink of an eye.

What I've been up to.

Hey guys I know it's been a while since I've blogged....Sorry for that.
I've been so busy with life....<hey it happens> . And my sweet angel boy had surgery last Thursday, and lord knows that was crazy. He's just now get back ok.

Word of advice...if you don't have to take your kids tonsils out, then take it from me and DON'T!!!

Well, that's about it....On a positive note I've stayed on track with my workouts tho....I'm so so on my not going to lie.

But with all that being said, God is good and after a few tears and screams<all from me> lol I'm back into my element, and I feel more like me again.

The New Me!! About much more then weight loss!

I wanted to share with everyone something that I was thinking about last night. I actually sat and gave myself a "MYSELF OVERVIEW"! Weird I know. But I'm a "realist" and I'm also my biggest critic. So I had to ask myself what has this journey done to me?. ( oh and my husband put his little in put in too)!

Have I changed who I am to my family, co-workers, friends? Am I a happier person, inside now? What have I accomplished(besides weight)? Who have I helped? What can I do better?

All these questions just started rolling in...But it made me think long and hard. (lets just say, I normally go to bed at 10p, last night I went at 1am)...

This journey has taught me that I am so much stronger then I thought I was, that I do have the will and the self motivation to push thru those hard times. No I'm not perfect but I'm here and I'm doing it, and I have amazing friends and family around cheering for me. I think about the friends that I've lost along this journey, but most importantly I think about the wonderful ones I've gained!!! and that overshadows all of that. I think about how the Hub can't keep his hands off me!! LOL I had to throw that in!!! Also, the fact that I have way more energy to play outside with my Brandon Boo!

And no losing weight didn't make me want to all of a sudden go out shopping and come home with $5000 dollar worth of clothes, because now I'm smaller and I can fit into more things then before and no I'm not going to take pics of just "me" all day long and post them to the world for attention.

That's not what this is about and that's not what I wanted to blog about either, because that stuff to me doesn't teach anyone anything. Yes, we take pics of our weekend, but I want to show you that I am a human and I do more then workout and go to the gym, because talking about exercise and eating good, starts to get boring. (I'm new to this and I don't want to run you off already)!!! So yes I like to share those times. Funny thing is I've always read peoples weight loss stories and would sit right there knowing I was just like that person and I had the will too it just took me 5 yrs to use it!!!

I've lost 50ish pounds so far and 6 sizes and yes that's huge!!! But I've gained a new person inside. I've always been outgoing with my friends and family. Love to joke and be the life of the party and hey I don't even drink and I'm usually the loudest one there!!!

But there can be times that we don't realize that losing weight and becoming this new person can sometimes changes us and not always for the better, and you may not even notice. And when I started this I never wanted to be a person that people go "boy every since Cynthia changed she thinks her shit don't stink" because that's not me.

It's more about what you can do for others not about just you all the time!

So for me ( and hubby agrees) this has actually brought me out of my shell as a person who isn't afraid to try new things like ( insanity and wanting to run every 5k) that comes to DFW (because before I wouldn't be caught dead running next to other people especially in public, with all my fat jiggling around) or going up and talking to people at the gym, instead of hiding in the back not knowing the moves and not wanting anyone to notice. Instead I want to be in the front waving my hands and sing in spin and stepping to the beat in step class and pumping iron in body pump!!! Being able to do all these things now like run, jump, and sprint, was something I never thought I could do before without dying!!

So see to me it's not about clothes, hair, cussing in every sentence, talking about someone or looking down on others because of who I am now. I started this because I wanted to help others and I hope I've done that so far for those that do read what I post.

I wish each and every person out there the best of luck with whatever it is that you are trying to accomplish with your lives!! I hope not to have upset anyone but like I said Im a "realist" and this was on my heart!!!

My Weekend-a-thon

We had a great weekend, but for me it was slightly different...How you might ask?
Well I don't have NOT one pic of me at the gym(( I know You gasped on that part)) and no it's not because I slacked either! I had my sweet angel boy Friday because he was out of school, so I had way too much fun with him and also Bran hates the gym!!!

Isn't that a face you would just love to kiss?!! I do all the time!!

SO me and brandon got our exercise on at McDonalds right after our chicken nugget happy meals!! Yes I had one too!!! But I did my Insanity, no gym doesn't = no workout, you have time trust me!!

Then we ran some errands and laid down for our Friday nap((boy, I never get to nap on Fridays)), becasue while the boys are at work and school, mama has to get all the work done before they are home.

So we ended our friday with some nice healthy turkey tacos....!! yummy( Don't we look full?) lol Full and Happy!

Saturday was great I got up did ANOTHER day of insanity Pure Cardio and Cardio killer Abs!
Then called Jen-Jen and headed out to the store to start making our t-shirts for the Shrinking Mommas!

We had soooooo much fun!! It wasn't a super pretty day but BOY it was warm, we even got to break out our flip flops!!!!!

Yes that is a chip!! I know I know, but it's Gloria's and I couldn't pass it up!

After that we headed over to Cinemark!! To watch the AMAZING TEMPTATION movie by Tyler Perry!!! And GUESS WHO???? Yes Crystal AKA Princess came too and looking all dang cute in her pink pants, that I am so going to steal soon!!!! Oh and Jen's tights too!! LOL

I love these women!!!!!!!!

Easter was great we had a wonderful relaxing family day together!!!!!
